Vinification | Traditional in red: the hand-picked grapes are crushed-destemmed, then fermented at a controlled temperature in thermo-conditioned stainless steel silos; at the end of the maceration (a few days) the skins are softly pressed and the alcoholic and malolactic fermentation is completed. |
