Le uve, raccolte manualmente, vengono pressate delicatamente e fermentate, dopo illimpidimento del mosto, con controllo di temperatura a 16°C, fino a completa trasformazione degli zuccheri. 3 mesi sur lie, fecce fini, principalmente lieviti esausti, che aggiunge complessità al bouquet.
