Rosso di Montalcino by Livio Sassetti Pertimali is produced from the vineyards of Podere Pertimali in the Montosoli area, north of the municipality of Ilcino; the characteristic of Montosoli is its geological composition, an important outcrop of galestro with few traces of clays and calcareous and clayey conglomerates. The harvest takes place at the end of September; The bunches of grapes are lightly pressed and the fermentation takes place in steel vats at a controlled temperature of 28 - 29°C with maceration for 10 - 15 days. The refinement is carried out for 6 months in steel vats, 6 months in the bottle.
