Vinification | The grapes are softly pressed to preserve the integrity of the skins. Before fermentation, the must obtained is decanted and the must obtained is cold decanted. Fermentation takes place at a controlled temperature of 16-18 °C. After fermentation, the wine is racked off and left to mature on the ini lees until the following spring, so that the extracted aromas are well expressed and balanced with the structure of the wine. |
