Winemaking

The grapes are hand-harvested in mid-September and left to dry in the drying room for approximately three months, where the bunches lose approximately 25-30% of their weight, resulting in a concentration of the berry's nutrients. After pressing, alcoholic fermentation begins in stainless steel at a controlled temperature for approximately 25-30 days. Continuous punching down of the cap is performed to facilitate the extraction of color and tannins. Finally, the wine is transferred to French oak barrels where malolactic fermentation takes place, imparting smoothness to the wine. After approximately 18-20 months of maturation, the wine is bottled for a further four months of aging.
